Is there a standard that specifies exactly what each mechanical Gerber layer is used for?

Actually the keepout layer should be the board's outline. But we can use any one of the mechanical layers to represent the board's outline. I think it doesn't matter which mechanical layer is used, you just need to tell the manufacture which one is the board's outline.

I haven't had a PCB house ask for mechanical layers or assembly drawings. I normally run off a pick-and-place file, which I'm guessing is helpful.
